Chicken Pasta recipe
Here's another delicious Chicken Pasta recipe, this time with a tomato-based sauce:
Ingredients:
8 ounces (about 225 grams) of dried pasta (spaghetti, fettuccine, or any pasta of your choice)
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
3 cloves garlic, minced
1 can (14 ounces) diced tomatoes
1/2 cup chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (adjust to your spice preference)
Salt and pepper to taste
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 cup baby spinach leaves
Fresh basil leaves, chopped, for garnish (optional)

Instructions:

Make it creamy: Lower the heat and stir in the heavy cream and grated Parmesan cheese. Let the sauce simmer for an additional 2-3 minutes until it thickens and becomes creamy.
Add the chicken and spinach: Add the cooked chicken back to the sauce and stir to combine. Toss in the baby spinach leaves and let them wilt slightly in the sauce.
Combine the pasta and sauce: Add the cooked pasta to the skillet with the sauce, tossing everything together until the pasta is well coated in the flavorful sauce.
Garnish and serve: Garnish the Chicken Pasta with chopped fresh basil leaves for a pop of color and extra flavor.
